chefCharlesAs the Executive Chef of the 1808 Grille in Nashville's exclusive Hutton Hotel, Chef Charles Phillips knows that eating right plays a key role in cancer prevention. Combined with adequate exercise, it can even lower the risk for someone with a family history of cancer. Healthy eating habits may seem difficult in the age of pre-made and pre-packaged everything, but with the help of Chef Charles, anyone can be on their way to healthy living.

Chef Charles has been in the business for over 15 years, preparing food for everyone from Bill Clinton to Bill Gates, and most recently, some of the biggest names in country and pop music. He has most recently served as Executive Chef and Food & Beverage Director for The Westin Chicago North Shore in Wheeling, Ill, a AAA Four-Diamond and Mobil Four-Star-rated hotel.

Having experienced loss of his own family members to cancer, Chef Charles is dedicated to the cause of eating healthy as a means of cancer prevention. The National Foundation for Cancer Research recommends eating at least five servings of fruits and vegetables a day, along with good sources of fiber, such as whole grain. Avoiding too much sugar and fatty foods is also a must because it prevents obesity, which increases the risk of having cancer.

The National Foundation for Cancer Research supports cutting-edge research that includes exploration into ways that diet and cancer are related. In fact, NFCR's research shows that more than 30% of human cancers are thought to be related to dietary factors. Some foods are related to cancer causation, while others help prevent it. NFCR Scientists like Dr. Helmut Sies from Düsseldorf, Germany,have made startling discoveries about diet and cancer, including the discovery that the carotenoid lycopene, found in tomatoes, helps prevent oxidation or damage to cells from free-radicals - which may be the largest environmental factor in cancer causation.
